
3 Broccoli and Prawn oven cooked Parcels

Delight in these vibrant broccoli and prawn parcels, a super speedy and healthy meal that's bursting with flavour and natural goodness. Perfect for a light lunch or dinner!
Preheat your oven to 200°C (180°C fan/Gas Mark 6).
Finely chop the broccoli florets, mince the garlic clove, and finely slice the red chilli.
Heat the extra-virgin olive oil in a large frying pan over a medium-high heat. Add the minced garlic and sliced red chilli and sauté for 1 minute until fragrant.
Add the chopped broccoli to the pan and cook for 5-7 minutes, stirring occasionally, until tender-crisp.
Stir in the prawns, salt, and black pepper. Cook for another 3-5 minutes, or until the prawns turn pink and are cooked through. Remove from heat and allow to cool.
Soak the rice paper sheets under a tap until they are pliable.
Lay out a sheet of rice paper. Place a spoonful of the broccoli and prawn mixture in the centre. Fold the sides of the rice paper over the filling, then roll up tightly to form a parcel. Repeat with the remaining rice paper and filling.
Place the parcels on a baking tray and bake in the preheated oven for 5 minutes, or until the rice paper is golden and crispy.
Serve immediately.
For an extra zing, squeeze a little fresh lemon juice over the parcels just before serving.
If you prefer a milder dish, remove the seeds from the red chilli before slicing.
This dish is also delicious with a sprinkle of toasted sesame seeds for added crunch and flavour.
