Finely slice the spring onion, peel the carrot into ribbons, and trim the broccoli.
Add a spoonful of coconut milk to a pan over medium heat. Stir in the white spring onion, ginger-garlic paste, tomato paste, and curry powder. Sauté for 2 minutes.
Pour in the remaining coconut milk and water, then stir in the mango chutney and carrot ribbons. Bring to a simmer for 3 minutes.
Add the gyoza and broccoli. Cover and cook for 5 minutes until the gyoza is cooked and broccoli is tender.
Season with soy sauce to taste.
Finely chop the coriander and sprinkle over the bowl, along with the reserved spring onion greens and a drizzle of chilli oil.
For extra protein, add some cooked chicken or tofu.
