Mince the garlic cloves. In a bowl, combine the turkey cubes with the beer, minced garlic, bay leaf, thyme, rosemary, paprika, black pepper, and salt. Mix well to ensure the turkey is fully coated. Cover and refrigerate for at least 30 minutes to allow the flavours to meld.
Preheat your grill or a griddle pan to a medium-high heat. Thread the marinated turkey cubes onto skewers. Discard the bay leaf and herb sprigs from the remaining marinade.
Brush the skewers lightly with extra-virgin olive oil. Place the skewers on the hot grill or griddle pan.
Cook for 8-10 minutes, turning occasionally, until the turkey is golden brown on all sides and cooked through. Baste with the reserved marinade during cooking for extra flavour, ensuring the marinade is cooked off completely.
Serve the turkey skewers immediately with your favourite side dishes, such as a fresh salad or roasted vegetables.
For an extra smoky flavour, add a pinch of smoked paprika to the marinade.
If using wooden skewers, remember to soak them in water for at least 30 minutes before threading to prevent them from burning on the grill.
For the best flavour, marinate the turkey for two hours.
