In a large pan, brown the beef mince over medium heat. Once cooked, drain any excess fat. Stir in the passata and cottage cheese, mixing well to combine. Cook for a further 2 minutes until heated through.
Lay out each low-carb tortilla. Spread a thin layer of the beef mixture evenly over each tortilla. Roll up each tortilla tightly to form a log.
Place the rolled tortillas into an air fryer basket or on a baking tray lined with baking paper. Top each roll generously with the grated mozzarella.
Air fry at 180°C for 8-10 minutes, or bake in a preheated oven at 180°C for 10-12 minutes, until the cheese is melted, bubbly, and golden brown.
Carefully remove the rolls from the air fryer or oven. Garnish with freshly chopped parsley before serving.
For an extra kick, add a pinch of chilli flakes to the beef mixture.
These rolls can be prepared in advance and stored in the fridge for up to 2 days before cooking. Just add the mozzarella before baking or air frying.
If you don't have an air fryer, you can bake these in a conventional oven at 180°C for 10-12 minutes, or until the cheese is golden and bubbly.
