Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente. Reserve 120 ml of pasta water and drain the spaghetti.
In a pan, cook the streaky bacon until crispy. Remove from heat.
Grate the cheese. In a bowl, whisk the eggs and grated cheese together.
Immediately add the hot drained spaghetti to the pan with the streaky bacon. Stir quickly, then add the egg-cheese mix and toss vigorously off the heat until creamy. Use reserved pasta water if needed.
Season generously with black pepper and serve immediately.
For a richer sauce, use the best quality eggs you can find. Free-range eggs will give a lovely colour and flavour.
