
Date Bark
Sink your teeth into this sweet and chewy date bark, a perfectly healthy snack that's utterly irresistible! Dates are packed with natural sweetness and fibre, making this a treat you'll crave.
Ingredients

Line a small baking sheet with parchment paper. Split each date open and press them, sticky side down, onto the sheet, ensuring they overlap and stick together. Cover with another layer of parchment paper and press firmly until you have a homogenous rectangle of dates. Flip the dates over so they are sticky side up and remove the top layer of parchment paper.
Drizzle the peanut butter over the top of the dates and spread evenly. If needed, microwave the peanut butter for 20 seconds to loosen it before spreading.
Chop the peanuts into small pieces and sprinkle them evenly over the layer of peanut butter.
In a microwave-safe bowl, melt the dark chocolate with the coconut oil. Heat in 30-second bursts, stirring between each burst, until the mixture is smooth. Spread the melted chocolate evenly over the peanuts.
Place the baking sheet in the freezer for 15-20 minutes until firm. Once firm, remove from the freezer and portion the date bark into desired sizes.
Store the date bark in an airtight container in the fridge or freezer.
For an extra crunch, lightly toast the peanuts before chopping and sprinkling them over the peanut butter.
Experiment with different toppings like shredded coconut, sea salt, or a sprinkle of chilli flakes for a flavour twist.
To make clean cuts when portioning, use a sharp knife that has been warmed under hot water and then dried.
