Preheat your oven to 150°C (130°C fan/gas 2). In a large bowl, combine the vegetable oil, maple syrup, honey, and vanilla extract. Stir well until thoroughly mixed.
Add the rolled oats, sunflower seeds, sesame seeds, pumpkin seeds, and flaked almonds to the wet ingredients in the bowl. Mix everything together until all the dry ingredients are evenly coated.
Divide the granola mixture onto two baking sheets and spread it out into an even layer. Place the baking sheets in the preheated oven and bake for 15 minutes.
After 15 minutes, carefully remove the granola from the oven. Stir in the dried berries and coconut flakes, ensuring they are distributed evenly throughout the mixture.
Return the baking sheets to the oven and bake for a further 10-15 minutes, or until the granola is golden brown and toasted. Keep an eye on it to prevent burning.
Once baked, remove the granola from the oven. Immediately scrape it onto a flat tray or large plate to cool completely. This prevents it from continuing to cook and becoming too hard. Once cooled, store in an airtight container for up to a month.
For a nut-free version, simply omit the flaked almonds and increase the quantity of seeds or add other nut-free additions like puffed rice or quinoa.
To achieve extra crispiness, ensure the granola is spread thinly on the baking sheets and stir it halfway through the second bake.
Store your homemade granola in an airtight container at room temperature for up to one month to maintain its freshness and crunch.
