In a small bowl, whisk together the cornflour with 50ml of the milk until smooth. Set aside.
In a saucepan, combine the remaining 200ml of milk, vanilla extract, and instant coffee. Heat over a medium heat, stirring occasionally, until the mixture is hot and steaming but not boiling.
Gradually whisk the cornflour slurry into the hot milk mixture in the saucepan. Continue to whisk constantly over a medium heat for 5-7 minutes, until the mixture thickens to a custard-like consistency.
Remove the saucepan from the heat. Stir in the toffee flavour drops and the whey protein powder until fully combined and smooth. Ensure there are no lumps from the protein powder.
Pour the mixture into two small ramekins or heatproof dishes. Allow to cool slightly at room temperature, then cover and refrigerate for at least 2 hours, or until fully set.
Serve chilled. You can garnish with a sprinkle of cocoa powder or a dollop of light whipped cream if desired.
For an extra coffee kick, you can add a shot of espresso instead of instant coffee.
Ensure the protein powder is mixed in thoroughly off the heat to prevent it from clumping.
