
Soy-Glazed Chicken Drumsticks & Cherry Tomatoes
Give your air fryer another chance with these super easy and incredibly delicious chicken drumsticks! Bursting with the sweet tang of cherry tomatoes and the savoury depth of soy sauce, this dish is a winner. Plus, the garlic provides amazing health benefits!
Ingredients
fresh thyme1 sprig
chicken drumsticks400 g4 units
cherry tomatoes300 g
red onion1 whole
soy sauce2 tbsp
salt1 pinch
black pepper1 pinch
extra virgin olive oil4 tbsp

Chef's Tips
For extra crispy chicken skin, ensure the drumsticks are patted very dry before seasoning and placing them in the air fryer.
If you don't have red onion, a white onion can be used as a substitute, though the flavour will be slightly milder.
Prepare the vegetables and seasoning
Finely dice the red onion and then place it into the air fryer basket together with the cherry tomatoes. Drizzle with extra virgin olive oil and soy sauce. Mix everything well to combine.
Season the chicken
Season the chicken drumsticks generously with salt and black pepper.
Combine and coat
Place the seasoned chicken drumsticks on top of the vegetables in the air fryer basket. Gently coat the chicken with some of the oil and soy sauce mixture from the vegetables. Top with the fresh thyme.
First cook
Cook in the air fryer at 180°C for 15 minutes.
Flip and continue cooking
After 15 minutes, carefully flip the chicken drumsticks and gently move the vegetables around. Cook for another 10 at 180°C minutes until the chicken is cooked through and golden brown.
