Give your air fryer another chance with these super easy and incredibly delicious chicken drumsticks! Bursting with the sweet tang of cherry tomatoes and the savoury depth of soy sauce, this dish is a winner. Plus, the garlic provides amazing health benefits!

Finely dice the red onion and spring onion. Place them into the air fryer basket lined with baking paper.
Add the cherry tomatoes to the air fryer basket with the diced onions. Drizzle with extra virgin olive oil and soy sauce. Mix everything well to combine.
Season the chicken drumsticks generously with salt and black pepper.
Place the seasoned chicken drumsticks on top of the vegetables in the air fryer basket. Gently coat the chicken with some of the oil and soy sauce mixture from the vegetables.
Cook in the air fryer at 180°C for 15 minutes.
After 15 minutes, carefully flip the chicken drumsticks and gently move the vegetables around. Cook for another 15 minutes until the chicken is cooked through and golden brown.
For extra crispy chicken skin, ensure the drumsticks are patted very dry before seasoning and placing them in the air fryer.
You can add a sprinkle of dried oregano or thyme to the vegetables for an extra layer of flavour.
If you don't have red onion, a white onion can be used as a substitute, though the flavour will be slightly milder.
