
R-Air Fryer Courgette Lasagna Stack
A quick, cheesy, and satisfying lasagna stack made entirely in the air fryer. Courgette provides excellent fibre and vitamins, making this a delicious and easy weeknight dinner ready in minutes.
Ingredients

- tomato sauce0.1 jar

Chef's Tips
To ensure the courgette cooks evenly and doesn't release too much water, make sure to slice it very thinly and pat it dry thoroughly before layering.
For a vegetarian option, substitute the cooked ham with layers of roasted red pepper or spinach.
Prepare the Courgette
Slice the courgette lengthwise into thin sheets using a mandoline or vegetable peeler. Pat the slices dry thoroughly using kitchen paper to remove excess moisture.
Assemble the Base
Line the air fryer basket with a square of baking paper or a suitable liner. Begin layering the lasagna stack directly onto the paper, starting with a layer of courgette slices.
Build the Layers
Follow the sequence: courgette, cooked ham, and sliced cheese. Repeat these layers until all the ham and sliced cheese are used, ensuring the stack fits neatly into the air fryer basket.
Finish the Stack
Top the final layer of courgette with the tomato sauce, spreading it evenly. Sprinkle generously with the grated cheese and oregano.
Air Fry
Place the basket into the air fryer. Cook at 200°C for 20 minutes until the cheese is melted, golden brown, and bubbling, and the courgette is tender.
