Peel and chop one apple into small pieces. In a blender, combine the oat flour, eggs, milk, chopped apple, baking powder, 1 teaspoon of cinnamon, 1 teaspoon of vanilla extract, and a pinch of salt. Blend until smooth.
Heat a non-stick frying pan over medium heat. Pour a ladleful of batter into the pan for each pancake. Cook for 2-3 minutes per side, or until golden brown and cooked through. Repeat with the remaining batter.
Chop the second apple into small cubes. In a separate frying pan, melt the coconut oil over medium heat. Add the chopped apple, 1 teaspoon of honey or syrup, 1 teaspoon of cinnamon, and 1 teaspoon of vanilla extract. Cook for 5-7 minutes, stirring occasionally, until the apples are softened and caramelised.
Stack the cooked pancakes on a plate. Spoon the warm caramelised apple topping over the pancakes. Optionally, sprinkle with chopped walnuts and a drizzle of extra honey or syrup.
For extra fluffy pancakes, let the batter rest for 5-10 minutes before cooking.
If you don't have oat flour, you can make your own by blending rolled oats in a food processor until a fine flour consistency is achieved.
Adjust the amount of cinnamon and vanilla to your taste for both the pancakes and the topping.
