Preheat your oven to 200°C (400°F). Cut the salmon into small, bite-sized pieces. In a bowl, mix the salmon with 3 tablespoons of spicy mayonnaise and 2 tablespoons of teriyaki sauce. Place the bowl in the fridge to marinate while you prepare the other ingredients.
Take the nori sheets and cut them into 12 large rectangles, approximately 7.5cm x 7.5cm (3x3 inches). You may have a few extra pieces.
Place a nori rectangle into each compartment of a 12-cup muffin tin. Using a spoon, press about 2 tablespoons of sushi rice onto the nori, leaving about 0.5cm (1/4 inch) clear from the edge of the seaweed. Gently press down with your hand or spoon to create a cup shape.
Add a spoonful of the marinated salmon mixture into each nori and rice cup. Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flaky.
Once baked, remove the muffin tin from the oven and let the sushi cups cool for about 15 minutes. This allows them to firm up and hold their cup shape. Gently grasp the corners of the nori seaweed with your fingers and carefully remove each sushi cup from the muffin tin.
Drizzle more spicy mayonnaise over the baked sushi cups. Sprinkle generously with sesame seeds and the chopped scallions. Serve immediately and enjoy your delicious homemade baked salmon sushi cups!
