Dice the pear tomato and avocado into small pieces.
Lightly drizzle a frying pan with extra virgin olive oil. Place the slice of wholemeal bread in the pan and toast until golden brown and crispy on both sides. Alternatively, toast in a toaster.
Transfer the toasted bread to a plate. Carefully tear open the burrata and spread it evenly over the toast.
Arrange the diced avocado and diced tomato over the burrata.
Spoon a generous amount of 100% peanut butter over the toppings, allowing it to drizzle down.
Sprinkle with sesame seeds and, if desired, a pinch of flaked sea salt and a few fresh basil leaves. Serve immediately.
For an extra burst of flavour, lightly season the diced tomato and avocado with a squeeze of lemon juice and a pinch of black pepper before adding them to the toast.
If you don't have burrata, fresh mozzarella or even a creamy goat's cheese can be a delicious alternative.
To make this a more substantial meal, you could add a poached egg on top.
