
Caramelised Peach Puff Pastries

Preheat your oven/ air fryer to 180°C. Line a baking tray with baking paper.
Wash the peach. Slice the peach into thin wedges.
On the lined tray, drizzle maple syrup in two separated spots to form a base for each pastry. Arrange peach slices neatly on top of the syrup bases. Drizzle with a little extra maple syrup and sprinkle with cinnamon.
Place a puff pastry rectangle over each peach stack, gently pressing the edges to seal.
Bake for 15 minutes, or until the pastry is golden, puffed, and the peaches are soft and caramelised.
Remove from the oven. Dust with icing sugar and serve warm, optionally with a scoop of vanilla ice cream.
For an extra golden crust, brush the pastry with a little egg wash before baking.
If you don't have fresh peaches, you can use canned peaches (drained well) or other seasonal fruits like apples or plums.
Serve with a dollop of crème fraîche or Greek yoghurt for a less sweet alternative to ice cream.
