
Chicken Caesar Smash Tacos
Get ready to taco 'bout a flavour explosion! These Chicken Caesar Tacos are packed with succulent chicken, crispy chickpeas (hello, fibre!), fresh veggies, and a creamy Caesar dressing, all wrapped in a perfectly cooked tortilla. Quick, easy, and utterly irresistible!
Ingredients

Chef's Tips
For an extra kick, add a pinch of chilli flakes to the chicken mince or chickpeas before cooking.
If you don't have an air fryer, you can roast the chickpeas in the oven at 200°C for 10-15 minutes, shaking the tray occasionally, until crispy.
Experiment with different cheeses! Cheddar or mozzarella would also work well in these tacos.
Prepare the Crispy Chickpeas
Preheat your air fryer to 200°C. In a bowl, toss the drained and patted dry chickpeas with 1 tsp smoked paprika, 1 tsp garlic granules, 1 tsp extra virgin olive oil, and a pinch of salt. Place them in the air fryer and cook for 5 minutes, shaking the basket halfway through, until they are golden and crisp. Set aside.
Season the Chicken Mince
Lay out the large tortilla wraps. Evenly spread the chicken mince over each wrap, extending close to the edges. Season the chicken with 1 tsp smoked paprika, 1 tsp garlic granules, salt, and black pepper, ensuring it's well combined with the mince.
Cook the Chicken Wraps
Heat 3 tsp extra virgin olive oil in a large frying pan over medium-high heat. Carefully place one tortilla, chicken-side down, into the hot pan. Press down firmly with a spatula to ensure good contact and colour. Cook for 3-4 minutes until the chicken naturally releases from the pan and is cooked through. Carefully flip the wrap, sprinkle 30g of finely grated Parmesan over the cooked chicken, and cover the pan with a lid. Cook for another 2-3 minutes until the wrap is crispy and the cheese has melted. Remove from the pan and repeat with the remaining wraps and chicken mince.
Prepare the Salad
While the wraps are cooking, shred the crisp lettuce, dice the cucumber, and quarter the cherry tomatoes (if using).
Assemble the Tacos
Lay each cooked chicken wrap, chicken-side up, on a chopping board. Drizzle 3 tbsp of Caesar dressing over the chicken. Evenly distribute the shredded lettuce, diced cucumber, and quartered cherry tomatoes (if using) over the dressing. Scatter the crispy chickpeas on top, add another drizzle of Caesar dressing, and sprinkle with extra Parmesan.
Fold and Serve
Fold each loaded wrap in half to create a taco shape, serve immediately and enjoy your delicious Chicken Caesar Tacos!
