
Vegan Chocolate Quinoa Crunch Bites
A guilt-free chocolate snack that delivers a satisfying crunch! Quinoa boosts these bites with extra fibre and protein, making them the perfect healthy treat to curb those chocolate cravings.

Chef's Tips
For an extra flavour boost, add a pinch of sea salt or a dash of vanilla extract to the melted chocolate before mixing with the quinoa.
Store these bites in the fridge for up to one week.
Toast the Quinoa
Place the quinoa in a dry frying pan over a medium heat. Toast the quinoa, stirring constantly, for about 5 minutes until the grains change colour slightly and begin to pop or puff. Remove from the heat and set aside in a bowl.
Melt the Chocolate
Break the dark chocolate into pieces and place it in a heatproof bowl with the coconut oil. Melt the chocolate either using a microwave in 30-second bursts, stirring between each, or over a saucepan of simmering water (bain-marie) until smooth.
Combine and Portion
Pour the melted chocolate mixture over the toasted quinoa and mix thoroughly until all the quinoa is completely coated. Line a baking tray with parchment paper. Using a teaspoon, drop small portions of the chocolate quinoa mixture onto the prepared tray, forming small discs or clusters.
Chill and Set
Place the tray in the refrigerator and chill for at least 30 minutes, or until the chocolate bites are completely set and firm.
Serve
Once set, remove the chocolate quinoa bites from the parchment paper and store them in an airtight container in the refrigerator.
