
Salmon Cloud Bake

To check if the quiche is cooked through, insert a knife into the centre; it should come out clean.
This quiche is delicious served warm or cold, making it perfect for meal prep or picnics.
Prepare the vegetables
Preheat your oven to 180°C (160°C fan/Gas Mark 4). Finely chop the courgette, carrot, and leek. In a pan, sauté these vegetables in 1 tablespoon of extra virgin olive oil until softened, about 7-10 minutes. Set aside to cool slightly.
Combine ingredients
Using a food processor or blender, combine the sautéed vegetables, raw salmon (cut in chunks), feta cheese, soft cheese, eggs, salt, and black pepper and blend on high speed for approximately 1 minute until the mixture is smooth and well combined.
Prepare the baking dish
Line the base of a quiche dish with baking paper and drizzle with a little extra virgin olive oil to prevent sticking.
Assemble the quiche
Pour the blended quiche mixture into the prepared quiche dish. Grate the cheddar cheese and sprinkle it evenly over the top of the mixture.
Bake the quiche
Place the quiche dish into the preheated oven and bake for 45 minutes, or until golden brown and set in the centre. The quiche may puff up during baking but will settle as it cools.
Serve
Remove the quiche from the oven and let it cool for a few minutes before serving. Garnish with a sprig of fresh parsley if desired. Slice and enjoy!
