Carefully cut off the stem of each fig. Make a cross incision over the top of each fig, ensuring the base remains connected. Gently open the figs slightly to create space for the filling.
Evenly distribute the crumbled feta cheese into the opened figs. Sprinkle the chopped pistachios and fresh thyme over the feta.
Place the filled figs in an air fryer and cook at 180°C for 5 minutes. Alternatively, you can bake them in a preheated oven at 200°C for 10 minutes.
