These Greek Chicken Wraps are a flavour explosion, featuring tender chicken, fresh veggies, and creamy tzatziki, all wrapped in a homemade flatbread. Mix the flour, yogurt, and a pinch of salt in a bowl. Knead the mixture into a soft dough, adding a splash of water if needed. Divide the dough into 2 balls. Roll each ball out on a floured surface to about 18 cm wide. Heat a dry non-stick pan over medium heat. Cook each flatbread for about 2 minutes per side until puffed and golden spots appear. Wrap the flatbreads in a clean tea towel to keep warm.
Cut the chicken breast into strips or bite-sized chunks. In a bowl, mix the olive oil, oregano, garlic powder, smoked paprika, salt, black pepper, and lemon juice. Add the chicken and coat well. Heat a non-stick pan over medium-high heat. Cook the chicken for about 7 minutes until cooked through and slightly golden.
Place a warm flatbread on a plate. Spread 2 tablespoons of tzatziki down the centre. Layer the cooked chicken, sliced onion, tomato, and cucumber. Drizzle with extra tzatziki.
For extra flavour, marinate the chicken for at least 30 minutes before cooking.
