
Grilled Halloumi & Peach Salad
This vibrant salad brings together sweet peaches, juicy tomatoes, and salty grilled halloumi for an utterly irresistible sweet and savoury combination. The fresh mint provides a lovely burst of flavour, perfectly complementing the other ingredients.

Chef's Tips
For an extra burst of flavour, try adding a squeeze of fresh lime juice to the dressing.
If you don't have fresh mint, fresh basil or parsley can be a good substitute.
Ensure the halloumi is patted dry before frying to achieve a crispier exterior.
Prepare the Salad Ingredients
Slice the peaches into wedges. Chop the tomatoes into bite-sized pieces. Slice the red onion into thin strips. Finely chop the fresh mint leaves.
Prepare the Halloumi
Slice the halloumi into even pieces and thoroughly pat them dry using kitchen paper to remove any excess moisture.
Grill the Peaches
Heat a drizzle of extra virgin olive oil in a griddle pan over medium heat. Grill the peach wedges for 1–2 minutes per side, just until lightly caramelised, then transfer them to a plate.
Grill the Halloumi
Add the halloumi slices to the same griddle pan and cook for 2–3 minutes per side, until golden and lightly charred.
Caramelise the Halloumi
Reduce the heat to low. Drizzle the grilled halloumi with honey and sprinkle over the chilli flakes. Continue to cook for 30-60 seconds, watching carefully until the halloumi is nicely grilled and caramelised.
Assemble and Dress the Salad Base
In a bowl or serving plate, mix together the chopped tomatoes, sliced red onion, and chopped mint. Season lightly with sea salt and freshly ground black pepper. Drizzle generously with extra virgin olive oil and balsamic glaze.
Combine Salad Components
Gently mix the grilled peach wedges into the dressed salad base.
Serve the Dish
Top the dressed salad with the warm, caramelised halloumi pieces and serve immediately.
