In a bowl, combine the juice of 1 lime, 2 tsp minced garlic, 3 tbsp honey, 1 tsp smoked paprika, 1 tsp cayenne pepper, 1 tsp chilli flakes, 1 tsp coriander, a pinch of salt, and a pinch of black pepper. Stir well until all the ingredients are thoroughly mixed.
Add the 4 boneless and skinless chicken thighs to the bowl with the marinade. Ensure all the chicken pieces are fully coated by stirring them in the mixture.
Heat a frying pan over a high heat. Once hot, add the marinated chicken thighs and cook for 5 minutes. Then, reduce the heat to medium, turn the chicken over, and cook for another 7 minutes, or until the chicken is cooked through and no longer pink in the middle.
While the chicken is cooking, prepare your serving bowls. Divide the cooked rice, salad leaves, guacamole, salsa, sour cream, and tortilla chips evenly between the two bowls.
Once the chicken is cooked, slice it into strips and add it to the prepared bowls. Serve immediately and enjoy your delicious honey and lime chicken burrito bowls.
