Heat the extra virgin olive oil in a pan over medium heat. Add the sliced red chilli, diced chorizo, and chopped garlic. Cook for 2 minutes, until the chorizo starts to crisp.
Add the king prawns and cook for 2 minutes, until pink.
Add the sun-dried tomato paste, tomato passata, and chicken stock paste. Stir well and simmer for 5 minutes.
