Take a large bowl, add the Weetabix, and crush them thoroughly until they form a fine crumb. Add the honey and peanut butter to the crushed Weetabix. Mix all the ingredients until they are well combined and form a cohesive mixture.
Divide the Weetabix mixture evenly among 6 silicone moulds, pressing it down firmly to create a compact base for each cup.
Melt the dark chocolate chips using a microwave or a bain-marie. Carefully spoon the melted chocolate over the Weetabix base in each mould, spreading it evenly to create a smooth top layer.
Sprinkle a pinch of flaky sea salt over the chocolate topping of each cup. Place the silicone moulds in the freezer for 1 hour to allow the cups to set completely.
Once set, remove the cups from the moulds. They are now ready to enjoy! Store any leftover cups in an airtight container in the fridge.
For an extra flavour boost, try adding a quarter teaspoon of vanilla extract to the peanut butter mixture before combining.
If you don't have silicone moulds, you can line a muffin tin with paper cases and use those instead.
