Preheat your oven to 220C/200C fan/gas 7. Take your baking potato, rub it with a little extra virgin olive oil, and season generously with salt and black pepper. Place the seasoned potato on a baking sheet.
Bake the potato for 25 minutes at the initial temperature. After 25 minutes, reduce the oven temperature to 190C/170C fan/gas 5 and continue baking for another 60 to 75 minutes, or until the potato flesh is tender when pierced and the skin is wonderfully crisp and golden.
While the potato bakes, prepare the filling. In a small bowl, combine the light soft cheese with a squeeze of fresh lemon juice. Season with a pinch of salt and black pepper.
Once the potato is cooked, carefully slice a cross in the centre of the top. Gently squeeze the base of the potato to 'pop' open the top, creating a space for your delicious filling.
Spoon the seasoned soft cheese mixture generously into the opened jacket potato. Flake the hot-smoked salmon fillet on top of the cheese.
