Spread garlic butter evenly on one side of each slice of sourdough bread.
On the unbuttered side of one slice of bread, spread the pesto. Layer the mozzarella slices, then top with diced tomato and chopped basil. Season with a pinch of pink salt and drizzle with balsamic glaze.
Place the second slice of sourdough bread, butter-side up, on top of the filling.
Heat a frying pan or griddle over medium heat. Place the sandwich in the pan and cook for 3-5 minutes per side, or until the bread is golden brown and the cheese is melted and gooey.
