
R-Quick Beef and Broccoli Stir-fry
A delicious, nourishing, and incredibly fast fakeaway dinner ready in just 15 minutes! Packed with lean protein and vitamin-rich broccoli, this dish is irresistible served over fluffy white rice.
Ingredients
- flank steaks450 g
very thinly sliced
- broccoli450 g
cut into florets
- cashews100 g
- extra virgin olive oil2 tbsp
- soy sauce8 tbsp
- water120 ml
- sesame oil3 tsp
- ginger4 g
freshly grated

- coconut sugar15 pinch
- cornflour6 tsp
- chilli flake1 pinch
- black pepper1 pinch
- white rice400 g

Instructions
Chef's Tips
To ensure the beef is tender, slice the flank steak against the grain before cooking.
If you prefer softer broccoli, steam it briefly before adding it to the stir-fry to reduce the cooking time in the pan.
For a gluten-free option, substitute the soy sauce with tamari.
Prepare the Sauce
In a bowl, whisk together the soy sauce, water, sesame oil, grated ginger, grated garlic, coconut sugar, cornflour, chilli flake, and black pepper until the cornflour is fully dissolved and the sauce is smooth. Set aside.
Cook the Broccoli
Heat 15ml of extra virgin olive oil in a large skillet or frying pan over medium heat. Add the broccoli florets and sauté for 4 to 5 minutes until they are tender-crisp. Remove the broccoli from the pan and set it aside.
Sear the Beef and Toast Cashews
Increase the heat to high. Add the remaining 15ml of extra virgin olive oil to the pan. Add the thinly sliced flank steak in a single layer and sauté for 2 minutes on each side to achieve a good sear and cook the beef to your desired doneness. Add the cashews and stir for 1 minute to lightly toast them.
Thicken the Sauce
Pour the prepared sauce mixture into the skillet with the beef and cashews. Bring the mixture to a simmer and cook for 3 minutes, stirring occasionally, to allow the cornflour to thicken the sauce.
Combine and Serve
Return the cooked broccoli to the skillet and stir until it is fully combined and coated in the sauce. Serve the beef and broccoli immediately over cooked white rice, topped with sesame seed.
