Boil the eggs for 7 minutes. Once cooked, cool them and peel.
Heat the sesame oil in a pan. Add the minced garlic and grated ginger and saute until fragrant. Add the pork mince and cook until browned.
Stir in the miso paste and chicken broth. Simmer for 10 minutes, and add the bean sprouts during the last 1–2 minutes.
Boil the ramen noodles separately according to the package instructions, then drain.
In a bowl, assemble the cooked noodles. Pour in the broth with pork, and top with the halved egg, chopped spring onions, and pickled ginger.
For a richer flavour, use good quality chicken broth. You can also add a splash of soy sauce to the broth for extra umami.
