
R-Sweet Apple and Cottage Cheese Toast
A high-protein breakfast twist on classic avocado toast, featuring sweet apple slices and creamy cottage cheese on toasted sourdough. Apples provide essential fibre, making this irresistible treat a healthy start to your day.
Ingredients
- sourdough bread1 slice
- cottage cheese100 g
- apple0.3 whole
- Ccinnamon1 tsp
- honey3 tsp
- Bbee pollen1 pinch
- thyme0.3 tsp

Chef's Tips
For a richer, more 'pie-like' flavour, mix a small amount of vanilla extract into the cottage cheese before spreading.
If you don't have bee pollen, substitute with chopped walnuts or pecans for added crunch and healthy fats.
To prevent the toast from becoming soggy, ensure the bread is fully toasted before adding the cottage cheese.
Prepare the Apple
Thinly slice the apple into half-moon shapes. Preheat your oven to 180°C (160°C fan/Gas Mark 4) or preheat your air fryer to 160°C.
Assemble the Toast
Toast the slice of sourdough bread until golden. Spread the cottage cheese evenly over the toasted bread. Arrange the apple slices neatly on top of the cottage cheese.
Bake or Air Fry
Place the assembled toast in the preheated oven or air fryer. Cook for 8 to 10 minutes, or until the apple slices have softened slightly and the toast is warmed through.
Finish and Serve
Remove the toast from the oven or air fryer. Sprinkle generously with cinnamon, then drizzle with honey. Garnish with a pinch of bee pollen and fresh thyme leaves before serving immediately.
